3. Taiyaki origin




Last time, I talked about Taiyaki predecessor organization Manjyu. This time I want to talk about Taiyaki origin Imagawayaki.

First, Azuki was very expensive goods until the Edo period. Common people did not eat Azuki. And Azuki has not in sugar before that. People were eating while boiled Azuki. They are not sweet. But it was also expensive goods for common people. Because sugar valuable goods in Japan at the time. Such a luxury item Sugar was began to domestic production in Japan. Eight generation general Yoshimune Tokugawa was order to make sugar in Japanese domestic. It was inspired. Various clan started to research how to purifying the sugar. The results, sugar are spread to the common people. And indispensable to Japanese confectionery Wasanbon was born in this among the process.
Azuki, sugar, Manjyu…protagonist has appeared all together.





As mentioned before, Imagawayaki is far from the genealogy of Manjyu and traditional Japanese confectionery. Many confectionaries similar to Imagawayaki exist across the country so many. Any calling out is a little different. It may be important things here.

It is the absolute difference of Manjyu and Imagawayaki.
I think so certainly. I have the image of Manjyu is Japanese confectionary. But Imagawayaki is no. Absolutely, I cannot think so. Also, many people cannot think so too. “Steam” is most major engraining in Japanese confectionary.
Around the same time confectionary was born “Mikasayama”. This is so called Dorayaki.

How to Mikasayama

However, Imagawayaki had been treated when Imagawayaki was born that Manjyu. Wrote in the book of the Showa era, “Imagawayaki Manjyu”. At this time, people confused how to call by Imagawayaki.
